Dear Friend,
I know from experience that it is not always easy to figure out if your
child is suffering from food intolerance symptoms!
Being a mother of three wonderful girls I am truly blessed! Lova, Linn
and My give me so much love and joy, and teach me so many lesson's.
However things haven't always been easy in our lives, since all of them
had colic as babies. My oldest daughter started sleeping better as she
grew older, but not my middle daughter Linn.
She cried throughout the night and it just got worse as time passed.
I spent countless nights walking around the house with Linn in my arms,
with her crying hysterically out of pain and with me sobbing helplessly
as well since I couldn't help her.
To see her in so much agony and not being able to help and find out
what was wrong made me feel like a terrible mother.
The doctors at our local healthcare center suggested we just wait and
see. I was perceived as an overprotective mother and was told Linn had
colic and that it would eventually pass. When she grew older and was
still waking up 15-40 times a night, the problem according to them was
that I hadn't taught her to sleep by herself and I was given brochures
about different sleeping techniques. No one seemed to believe me about
the terrible pains she suffered from.
Since my academic background is in immunology, I quite early on presumed that
she might be gluten intolerant
Linn had tantrums, an enormous belly and tiny limbs, she was very small
for her age, and most importantly her problems increased when she
started eating bread and pasta.
However it is one thing to know something and another thing altogether
to take action! In real life I had two baby daughters, born only 16
months apart, and I was just trying to make it through the day.
When Linn was one I finally managed to convince the doctor to send us
to a specialist, however the food allergy test (IgE) didn't show
anything. Was I wrong? Maybe her problems weren't caused by a food
intolerance? I was beginning to doubt myself.
When Linn was one and a half she was still waking up 15 times a night.
Since I was pregnant with her sister My in the third trimester I felt
that in order to survive we needed to fix this right now. So I made one
last effort and googled the internet. To my joy I found a nurse in my
city who was cooperating with a company in the US providing IgG food
allergy tests.
I wanted to check IgG as well as, but this is not always available as
an option. After two weeks we received an answer which showed a
positive result for milk, egg and also whey, barley and wheat.
Since we didn't have the energy to change her diet completely we
removed milk and egg and skipped sandwiches and pasta. Within a month
we went from 15-40 wake ups per night to 3-5 wake ups, which we felt
was quite endurable.
After a year we removed all gluten from her diet and almost immediately she
slept all through the night!
After six months without any gluten she grew twice as much as she did
the whole year before. And her tantrums became fewer and fewer.
She was like a different kid, so much more happy and content with life!
During this time I amassed a lot of information about food allergies
and intolerances. I felt that I needed to be well informed in order to
help my daughter heal.

Baking Gluten Free Can Be Tricky...
I loved baking! But when I realized my daughter was gluten intolerant I
had to relearn everything I knew. My cakes and muffins turned out dry
and tasteless, and I started to dread birthday parties. So I searched
the internet for ideas.
But The Recipes I Found Called For Ingredients I had Never Heard Of; Like
Xantan Gum, Guar Gum and Amaranth Flour.
I had three children under the age of five and I had neither the time
nor the energy to search for strange ingredients, and then mix several
types of flour. There had to be an easier way.
Unfortunately gluten is what gives baked goods their texture, since
gluten enables the dough to rise and bind together. So gluten-free
bread and muffins tend to become both heavier and with less flavor.
The trick was to find a way to achieve a moist and light texture using
an all purpose gluten-free flour.
After a long process of trial and error I came up with delicious AND
Easy recipes that my daughters loved. What's more, my third non-gluten
intolerant daughter loved them. And all their friends loved them!
I Found A Way To Increase The Flavour And Texture Of My Baked Goods, Using
Common Ingredients I Already Had In My Pantry.
What's more, these same ingredients even made my cakes more nutritious
that the standard gluten free variety. This is important since a gluten
free diet is often fibre and nutrient deficient.

I didn't want to feed my daughters junk. I wanted my kids to get all
the vitamins and protein they needed to stay healthy.
